Our History

Paco and Tina Rodriguez founded SAGE Dining Services® in 1990 in the basement of their Baltimore, Maryland, home with a vision of quality, integrity, and “Setting a Good Example®.” Beginning with a focus on independent schools, SAGE has grown to serve a variety of communities, including senior living and active adult communities through JADE Hospitality™.

The Rodriguez family’s commitment to core values — independence, integrity, frugality, stewardship of resources, fairness, and authentic partnerships — remains steadfast. Paco and Tina’s vision ensures that SAGE and JADE stay family-owned and -operated, preserving these values. They travel extensively, building close personal relationships with clients, treating each with the same care and personalized approach, making them feel like part of the family.

Today, the second generation continues Paco and Tina’s legacy.
